- So Fridays are usually lazy days around my house. After a long week it feels good to just unwind and relax. No worries of waking up early the next morning or thinking of what to make for dinner so that Nirav and I can eat the same for lunch the next day. I am pretty much free to make what ever I choose. It is usually on days like these when I love making simple pizza at home the 'semi-homemade' way! This is one of our favorite pizza recipe. Ofcourse, feel free to cook up some bacon on the side, cut it in little bite size pieces and add it to the pizza before serving. As Nirav and brother-in-law, Aakash always say "Bacon makes everything better!" ... haha. I have to say I do agree. So here goes.
makes 1 pizza / serves about 4
- 1-1/2 boneless chicken breast cubed (marinate for some time in salt and black pepper)
- 1 cup honey bbq or sweet and zesty flavored barbeque sauce
- 2 teaspoons brown sugar
- 1/4 bunch fresh cilantro, chopped
- 1 pillsbury thin crust pizza dough
- 1/2 cup mozarella cheese, shredded
- 1/2 cup thinly sliced red onion
- 1 tablespoons garlic, minced
- Preheat oven to 400 degrees F (or as instructed on the pillsbury thin crust tin).
- In a saucepan over medium high heat, combine chicken, ½ cup barbeque sauce, garlic, brown sugar. cover and cook until chicken is tender. Add extra salt pepper if needed.
- Spread some oil over the non stick pan.
- Place the stretched out pizza dough on the oiled pan. Keep in the oven for 5 min (as directed on the tin).
- Spread the remaining ½ cup of bbq sauce on the crust after removing it from the oven. Add chicken mixture evenly over pizza crust, and top with cheese and onions.
- Bake for 10
minutes, or until cheese is melted.
- Serve warm with crushed red pepper (for increased spiciness) and cilantro.
